Search for Okinawan Sweet Potatoes


 The OKINAWAN SWEET POTATO

I need to find these for my garden. 
What are the benefits over the ordinary sweet potato?
Sweet potatoes of all varieties are high in vitamin A, vitamin C and manganese. They are also a good source of copper, dietary fiber, vitamin B6, potassium and iron. Sweet potatoes are known to improve circulation and  blood studies have discovered significant antibacterial and antifungal properties. The primary nutritional benefit, and the one for which Okinawan sweet potatoes are especially prized, is their high antioxidant levels.
The antioxidant known as anthocyanin is the pigment which is responsible for the brilliant purple color of the flesh. It is the same pigment that gives blueberries, red grapes and red cabbage their color. Blueberries are well known for their high antioxidant levels, however, the Okinawan sweet potato actually has 150 percent more antioxidants than blueberries.  Antioxidants help to guard against cardiovascular disease and cancer.

Mashed Okinawan Sweet Potatoes

Ingredients:
3 lbs. Okinawan sweet potatoes
1 can of coconut milk
cinnamon powder to taste
salt to taste
    Preparation:
  1. Peel the Okinawan sweet potatoes and chop into 1 inch cubes.
  2. Boil potatoes for 30 minutes or until soft (will turn dark purple), then drain.
  3. Mash the purple potatoes while adding in coconut milk and cinnamon powder to taste. Add sea salt to taste if desired.
  4. Makes 12 servings.

Spring is here ..Time to plan your garden!

I have been going through the seed catalogs and am ready to plan our garden.  I am tired of having to go to the store during winter to pay for not fresh tasting produce! Trying to get hints and help, I came across this site Click Here  (this will take you to a new window....


I have a seed catalog from Botanical Interests that I will be ordering seeds from  www.botanicalinterests,com. There is an interesting beet the Chioggia that has great visual interest and maybe it will help me enjoy vegetables.

Yes....I am not a fan of vegetables. I am just a carnivore......but I I have to forge forward plant the vegetables and learn to enjoy them.  Life is more than french fries...

Why are tomatoes so hard? Some years that grow like crazy, but some not....weather (sun and moisture) are big factors. Click here or the photo to get hints on to get tomato hints and success! Oh, a tomato mozzerella sandwich sounds good now...


Planting a garden. Great! But we must address pollination. What? When you see the word pollen, you think of allergies. 

But honeybees do the magic in your garden (and your flowers!) 


We have a hive and want to expand it to two this year. You cannot beat fresh local honey. It is best to read upon this, because if you have the space it is a great idea. Beeswax, honey (a great gift for family and friends) and best yet, pollination for your garden!!!
